Scour your recipe books on Sundays and make a meal plan for the week. Add needed items to your shopping list. Make a few meals ahead of time and freeze them for the busiest evenings.

I make a menu for two weeks of dinners and then I make a grocery list of what I need including any staples I may need. If I don't want to have a certain dish on the night it is planned, I can always switch it with another night. It's works great!

I make Sunday my night for cooking. Open a bottle of wine, cook some Chicken Breasts, bake some salmon, and cook some ground turkey, all three can be a meal with easily prepared side dishes for dinner, or tossed on an easy salad. I make the salads for the week for lunch in advance and then it's as easy to grab and go as a frozen dinner would be, but much healthier for me!
